CHEF CESARE CASELLA, CHIEF OF DNA, FEATURED IN ICONIC LIFE MAGAZINE

Our Master Chef and Chief of DNA (Department of Nourishing Arts) here at The Center now gets the title “Iconic” as the feature in the latest Iconic Life magazine.

Life has come full circle for Cesare Casella. His love of the land, plants and animals has taken him on an incredible journey as one of the most revered world-class chefs and restauranteurs.

His signature smile and rosemary sprig in his chef’s coat pocket is recognized far and wide. To many, he is the “Proscuitto Whisperer.” In fact, his Proscuitto Speciale won the People’s Choice award at the annual Charcuterie Masters festival in New York City this year.

But to us here at TCFD, he is the root of the Seed to Belly program. Our Sullivan County campus reminds him of the country of his youth. And he reminds us that we are connected to the earth. And nourishment starts with respect for the soil, plants, trees and animals.This respect changes everything.His team of 30 chefs makes nearly 1,800 meals a day for our 500 residents and students with complex health conditions. And each meal – they reach a better level of health.
