At The Center for Discovery, students and residents play an essential role in the vinegar-making process at Acetaia del Sole, working alongside staff to press apples, measure, bottle, and label each batch with purpose and care. Their work recently took center stage during a special tasting event led by Chef Cesare Casella and visiting culinary professionals, who gathered to select the blend for the 16th Edition of The Center’s Special Cuvée,  a handcrafted vinegar that embodies collaboration, tradition, and inclusion.
