Not only are all the products grown on The Center’s organic, biodynamic farm, they have a key ingredient – love. It’s love that comes from the residents and students at TCFD who are very involved in the food process. TCFD’s Chief of the Department of Nourishment Arts, Cesare Casella, explains the Seed to Belly® philosophy, “We try to involve our community at every level of the food chain in DNA when possible. Residents and students are particularly responsible for processing and packaging all of our dried culinary herbs and herbal tea.”
The residents and students love being a part of the process. “All of these products help to provide meaningful work and learning opportunities. Projects may support fine motor skills, organization, and other important lessons,” adds Chef Casella.
An organic, plant-based whole foods diet is central The Center’s health model as is spending time to cultivate, cook and share food. Of the holidays, Chef Casella says, “We always talk about how food can bring people together and at the holidays it is most powerful.”
